I've caught one so far but there seems to be many of them left! How many do I need to catch before the house is clear? Will catching all of them ensure that the house not be reinfested for a respectable length of time?Typically how many mice are in an average house that has been infested?

The problem is the mouse rate of reproduction. One female can have as many as 14 offspring (6 - 8 average) as often as 10 times a year (average 7 - 8 times) and mice can start breeding after they are 6 weeks old. At that rate it doesn't take long before you are counting mice by the hundred.

the cats cant get into basement, old house, floor is always wet, so i just caught 16 of them in the basement over 2 weeks.

unfortunately, sometimes they drop a half eaten mouse on your bed at 3 am, but nobody's perfect.
If you caught just one, but you detect the presence of more, you have lots of'm ! Set out poison bait,traps,and clean up ANY source of food for them ! A cat will not really help much. I had a mouse problem once, with 4 cats ! Once they had there fill of chasing and munching, they would just watch the mice run around, too bored to do anything ! Needless to say, I got rid of the cats, as well as the mice !
Mice can bear a new litter about every two weeks, with 6 to 8 pups per litter. Within the course of several months you could have thousands of them running around.
As much food as there is to eat. Store dry food in metal containers. Cover the trash.
